What's For Lunch: Veggie Burger

Since we had a bunch of leftover burger fixin's, a veggie burger seemed to be a good option for lunch today. I slathered my portabella Gardenburger with half a wedge of Laughing Cow swiss cheese, and topped it off with a couple raw onion rings and tomato slices. Plus a little 365 ketchup. This hearty burger definitely kept my hunger at bay until dinnertime. Though Gardenburgers are great for the sake of convenience, I think I may have to try my hand at making my own veggie burgers sometime soon.

  1. We make a really easy black bean burger that we all enjoy. Take canned or dried-and-re-hydrated black beans, mash them up and then add an egg or two and some bread crumbs and seasonings to your preference. It should feel like meatloaf/raw meat texture--add eggs and breadcrumbs to reach the right consistency. Then shape into patties and fry in a little olive oil over medium until nicely browned on the outsides. Serve like regular burger. In our house that means buns, lettuce, tomato, mayo etc for the adults and chopped into wedges with dips for the kids.

    The original recipe I saw for this used white beans, but we prefer the black. I suppose any beans would work.
