What's For Dinner: Caprese Pork Chops

Give your pork chops an Italian makeover with this delicious summertime recipe that features fresh mozzarella, ripe tomatoes, and basil.

Caprese Pork Chops 
makes four servings

1/2 cup balsamic vinegar
1/2 cup olive oil (plus 2 tablespoons for the skillet)
3 cloves garlic, minced
1/2 teaspoon dried basil salt and fresh ground pepper to taste
4 bone-in center cut pork chops
4 slices fresh mozzarella
1 cup cherry tomatoes, sliced
1/4 cup freshly chopped basil leaves

1. In a large glass baking dish, combine the balsamic vinegar, olive oil, garlic, dried basil, salt, and pepper. Add pork chops and toss until coated. Cover and marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
2. Preheat the oven to 375 degrees.
3. Add two tablespoons of olive oil to a large cast-iron (or other oven-proof) skillet over medium-high heat. Add the pork chops and sear for 4 minutes, or until golden brown. Add the cherry tomatoes to the skillet. Flip the pork chops and continue to cook for an additional 4 minutes.
4. Remove the skillet from the heat and top each pork chop with sliced mozzarella.
5. Place the skillet in the oven and cook for 8–10 minutes, or until the cheese is melted and pork is cooked through (145 degrees F).
6. Remove from the oven and top with basil.
7. Transfer the pork chops to a serving plate and drizzle each pork chop with some of the balsamic glaze left in the skillet before serving.
