What's For Dinner: Black Bean Enchiladas with Red Scallions and Cremini Mushrooms

{via}

Today I'm over at Lancaster Farm Fresh Cooperative CSA Recipe Group, where I've shared a recipe for black bean enchiladas with red scallions and cremini mushrooms. Head on over and take a gander if you'd like. And, if you're new to my blog, welcome! Feel free to poke around the archives.

  1. This sounds yummy. I plan to try this tonight! I am also in the LFFC CSA. It's our first time in a CSA and so far so good :)

    Your recipes will be a great resource!! I'm blogging our attempt as well at eating less processed food and how NOT to fail at a CSA (we heard nightmare stories of leftovers in excess, but so far so good!).

  2. @DFig Thanks! We ate our way through most of last week's box; I think we just have a couple of rhubarb stalks and a half-bunch of romaine lettuce left. Given the contents of this week's box, I have a feeling we will be eating a lot of salads in the upcoming week as well!
