Dry-Fried Tofu

1 pkg extra firm tofu

1. Drain the tofu and cut into 1" cubes.

2. Place the cubes on a towel and wrap it in the towel's free ends.

3. Place a heavy book or weight on top of the cubes and soak up the excess moisture for at least 10 minutes, preferably longer.

4. Heat a large skillet over medium-high heat. Add in about half the cubes.

5. Brown on each side (about one minute per side). Remove from heat and repeat with remaining cubes.
